Oat Picnic Bars Recipe
Hey lovelies,
Today I'm going to share one of my eating clean recipes, made with equal amounts of experimentation, love and exasperation in my kitchen!
Oat picnic bars. A granola'esque bar that's incredibly scrumptious and totally clean, yay.
One of the first lessons I learned about following a clean eating plan is the struggle to find healthy 'portable' food.
You know, that easy snack when you're out and about. It's not always convenient to dig out the tupperware containers (am I the only person who still says that???) and now summer is here I wanted something that I could take with me on a trip to the beach, park, back garden....you know?...picnic goodies!
So here's my recipe containing a secret ingredient, to make healthy oat picnic bars.
You will need:
8 oz (200g) oats
2 oz (50g) chopped or flaked almonds
2 oz (50g) chopped mixed nuts and dried fruit
2 oz (50g) chopped dried apricots or dates
2 oz (50g) dried/dessicated coconut
Dash of almond milk
2 x 100ml pouches of baby fruit dessert -I used Totally Scrummy Organic Apple, Banana & Mango pouches.
Yep the secret ingredient is baby food!
These pouches are just pureed fruit and perfect for adding natural sweetness and liquid to the recipe. And just check out those ingredients, apple, banana and mango... that's all, perfect for clean eating recipes, or just clean eating. Of course you could puree your own fruit but for me, this was way easier.
To make:
Add the dry ingredients to a bowl and combine thoroughly. Add the fruit pouches and mix again.
The mixture needs to bind together when pressed so add a dash of almond milk if it's too dry.
Grease a baking tray (line with parchment if needed).
Pour the mixture into the baking tray and press firmly.
Bake at 160C (320F) for 30 mins until golden brown. When cool cut into bars and enjoy!
